  • Prepare a wide range of Arabic salads and cold mezze (e.g., tabbouleh, fattoush, tahini, baba ghanoush, vine leaves, moutabbal, coleslaw, hummus variations).
  • Follow standard recipes, portion sizes, and presentation guidelines.
  • Ensure freshness of ingredients through proper storage, rotation (FIFO), and labeling.
  • Assist in menu development for new salads and seasonal mezze items.
  • Maintain a clean and organized cold kitchen workstation at all times.
  • Coordinate with the main kitchen for stock requests and ingredient needs.
  • Check daily mise-en-place and ensure readiness for service.
  • Monitor food quality, taste, and consistency throughout the shift.
  • Follow all food safety and hygiene procedures (HACCP standards).


Skills


  • 5 years’ experience in Arabic cuisine, specifically cold kitchen/salads.
  • Strong knowledge of traditional Arabic salads, ingredients, and preparation techniques.
  • Attention to detail in taste, texture, and presentation.
  • Ability to work in fast-paced, high-volume environments.
  • Basic knowledge of food safety and hygiene (certification preferred)
