MIRA Construction is looking for an experienced and hands-on detail-oriented Finance Controller to build and manage a transparent, data-driven financial control system for one of our projects in Bakery Industry.
This role will take full ownership of costing, margins, inventory control, and management reporting.
The successful candidate will play a critical role in driving profitability, operational discipline, and financial clarity across the production function.
This position is designed to evolve into leading the finance function of the production team.
Key Responsibilities Costing & Unit Economics (Core Focus) Build and maintain accurate recipe-level costing (ingredient-level, gram accuracy).
Monitor raw material price fluctuations and update COGS accordingly.
Calculate and track: Food Cost % Production cost per batch Yield & wastage Contribution margin per SKU Allocate overhead costs (rent, utilities, labor, packaging) accurately into unit economics.
Analyse product-level margins and recommend pricing adjustments.
Conduct variance analysis (theoretical vs.
actual costs).
Monitor shrinkage, spoilage, and write-offs.
Develop structured costing models to support scaling and new product launches.
Inventory & Production Control Design and implement structured inventory control procedures.
Manage stock movement across raw materials, semi-finished, and finished goods.
Supervise monthly physical inventory counts (minimum requirement).
Monitor batch accuracy and production efficiency.
Identify abnormal consumption or wastage patterns.
Ensure purchasing discipline based on forecasts and stock thresholds.
Financial Reporting & Management Accounting Prepare and present: Weekly performance reports Monthly management P&L Cash flow tracking reports Monitor and analyse key KPIs: Food Cost % Labor % Gross Margin Net Profitability Provide actionable financial insights — not just reports.
Partner closely with the Founder on: Scenario modeling Break-even analysis Expansion and scaling decisions Compliance & Accounting Manage VAT compliance (UAE).
Coordinate with external auditors where required.
Maintain structured and clean bookkeeping systems.
Ensure financial processes are audit-ready at all times.

3+ years experience in F&B, manufacturing, or production accounting.
Strong understanding of food production costing and unit economics.
Proven experience building management reporting systems from scratch.
Advanced Excel / Google Sheets skills (financial modeling capability required).
Strong analytical and problem-solving ability.
Detail-oriented with strong operational discipline.
