We are now looking for a Pastry Head Chef who is ready to elevate our production standards and lead our pastry division to new heights.Position: Pastry Head Chef (Central Kitchen Production) Location: DubaiKEY RESPONSIBILITIES:Pastry Production Leadership Oversee and manage the daily production of all pastry items including cakes, tarts, desserts, entremets, creams, fillings, and decorative elements, ensuring consistent quality and on-time delivery.Recipe Control & Standardisation Implement, develop and maintain standardized recipes, portion control and production methods across all pastry lines.Product Development & Innovation Lead the creation of new products in collaboration with BABA ROMA Brand Pastry Chef, introducing seasonal concepts, signature desserts, and modern pastry techniques aligned with the brand DNA.Process & Workflow Optimisation Plan production cycles, allocate resources, and streamline workflow to ensure efficiency, productivity, and minimal waste.Team Leadership & Training Manage, train, and mentor pastry chefs and support staff, encouraging skill development, discipline, accountability, and a culture of excellence.Quality Assurance & Compliance Enforce strict quality control standards, food safety procedures, hygiene regulations and full HACCP compliance at all times.Production Software & Organisational Systems Lead the use of production management software, inventory/ERP systems, yield reports, wastage tracking and internal organisational tools to monitor performance, control stock, and improve efficiency.Inventory & Cost Control Oversee ordering, stock levels and usage of raw materials to ensure optimal inventory, cost control and minimal wastage.Equipment & Department Oversight Ensure all pastry equipment, tools and workstations are properly maintained, calibrated and functioning optimally.Cross-Department Coordination Work closely with the Bakery Head Chef, Culinary Heads and Operations to align production with business requirements and outlet demand.KEY REQUIREMENTS / CANDIDATE PROFILE:5+ years of professional experience in pastry and patisserie, with at least 3 years in a leadership or Head Chef role Strong expertise in mousse, ganache, tarts, entremets, laminated doughs, plated desserts and modern pastry techniques Proven experience in high-volume production or central kitchen environments Strong leadership, communication and team management skills Ability to work confidently with production software, ERP systems, digital reporting tools and inventory systems In-depth knowledge of food safety standards, hygiene and HACCP compliance Strong organisational and planning abilities in a fast-paced setting Experience in cost control, yield optimisation and waste reduction Creative mindset with a passion for innovation and excellenceWhat We Offer:Competitive salary and benefits package Career growth opportunities in a growing luxury-casual dining brand Creative freedom and autonomy to build and expand pastry operations Dynamic and supportive work environmentIf you are a Pastry Head Chef ready to take on a leading role within an ambitious and fast-growing brand, please apply to lead BABA ROMA | Dubai team.
