You will take ownership of specialty ingredients and resource planning, ensuring thoughtful management of food and labor costs while maintaining exceptional quality, authenticity, and the spirit of the Shangri-La experience.</span></p><br><br>

<p><span><strong>Key Responsibilities</strong></span></p><br><br>

<li><span>Manage food quality and consistency by overseeing preparation, recipe compliance, and regular tasting of all dishes.</span></li>
<li><span>Introduce creative presentations and innovative concepts for menu offerings.</span></li>
<li><span>Control production and costs by adjusting output based on forecasts and ensuring effective food cost planning and monitoring.</span></li>
<li><span>Maintain portion control and presentation standards to ensure all dishes are visually appealing and consistent.</span></li>
<li><span>Ensure high standards of hygiene and food safety through regular coordination with the Hygiene Manager and monitoring kitchen cleanliness.</span></li>
<li><span>Oversee quality of ingredients by working closely with Purchasing and participating in supplier selection and goods inspection.</span></li>
<li><span>Lead menu development and innovation by planning new menus, proposing items, and encouraging team creativity.</span></li>
<li><span>Monitor guest satisfaction by reviewing feedback daily and engaging directly with guests to understand their expectations.</span></li>
<li><span>Train and develop team members by conducting training sessions on new menus and maintaining high culinary standards.</span></li>
<li><span>Collaborate with leadership including the Executive Chef and Director of Food & Beverage to align on objectives and strategy.</span></li>
<li><span>Ensure operational excellence by setting service standards, monitoring performance, and participating in kitchen operations and restaurant setup.</span></li>
<li><span>Work closely with the Marketing Team on promotions & campaigns.</span></li>

<p><span><strong>About You</strong></span></p><br><br>
<ul>
<li><span>Minimum of 2 years as Executive Chef or a similar position, with a proven track record of success in luxury hotel/s or fine dining sector.</span></li>
<li><span>Diploma or Degree in Culinary Arts, Hospitality Management, or a related field.</span></li>
<li><span>Strong knowledge of food quality standards, cost control, and kitchen operations.</span></li>
<li><span>Certified in food safety/hygiene (HACCP preferred).</span></li>
<li><span>Proven leadership skills with the ability to train and motivate teams.</span></li>
<li><span>Creative mindset with experience in menu development and innovation.</span></li>
<li><span>Strong focus on guest experience and service excellence.</span></li>
<li><span>Ability to work in a fast-paced, high-pressure environment.</span></li>
