About the job Production Pastry Chef
<p><strong>Job Purpose</strong></p><br>
<p>
Lead the daily high-volume pastry and bakery production of a central kitchen supplying multiple outlets (restaurants, cafés, hotels, retail, catering). Deliver consistent quality at scale, on schedule, within cost and full compliance with UAE / Dubai Municipality food safety standards.</p><br>
<p><strong>Key Responsibilities</strong></p><br>
<p>Production & planning</p><br>
<ul>
<li>Plan and execute daily/weekly production schedules based on outlet orders and forecasts.</li>
<li>Produce the full pastry range at volume: viennoiserie, laminated dough, entremets, cakes, desserts, breads, plated components, frozen/chilled semi-finished products.</li>
<li>Scale recipes accurately for batch production; maintain standardized recipes, gram-weight specs and yields.</li>
<li>Operate and manage central-kitchen equipment: deck/rack/convection ovens, sheeters/laminators, planetary mixers, blast chillers/freezers, tempering machines, depositors.</li>
</ul>
<p>Quality & consistency</p><br>
<ul>
<li>Guarantee identical product quality across every batch and every outlet.</li>
<li>Enforce portioning, weight, finishing and packaging standards.</li>
<li>Manage shelf life, blast-chilling, freezing, labelling and cold-chain integrity for distribution.</li>
</ul>
<p>Food safety & compliance</p><br>
<ul>
<li>Apply and maintain HACCP-based food safety management; act as/support the Person In Charge (PIC) per Dubai Municipality Foodwatch requirements.</li>
<li>Ensure temperature logs, traceability, allergen control, FIFO, hygiene and sanitation standards are fully respected.</li>
</ul>
<p>Cost & inventory</p><br>
<ul>
<li>Control food cost, portion cost and waste; monitor yields and variance.</li>
<li>Manage stock, ordering, supplier goods receiving and inventory rotation.</li>
</ul>
<p>Team</p><br>
<ul>
<li>Supervise, train and schedule the pastry production team (chefs de partie, commis, helpers).</li>
<li>Assign stations, monitor productivity and maintain discipline and morale.</li>
</ul>
<p>R&D</p><br>
<ul>
<li>Develop and standardize new products for central production and roll-out to outlets.</li>
</ul>
<p><strong>Requirements</strong></p><br>
<ul>
<li>5+ years in pastry, with proven <strong>central kitchen / high-volume central production</strong> experience (essential).</li>
<li>Strong background in batch production, recipe scaling and standardized-recipe systems.</li>
<li>Culinary/pastry qualification.</li>
<li>Valid <strong>Dubai Municipality PIC / food safety</strong> certification (or ability to obtain); HACCP knowledge essential.</li>
<li>Solid understanding of cost control, yields and cold-chain / distribution logistics.</li>
<li>Able to work in a fast-paced, high-output, temperature-controlled environment; physically fit; flexible on early/shift hours.</li>

Technical skills: Excellent knowledge of pastry, desserts, chocolate, viennoiserie, and bakery techniques, plus general kitchen skills. Cuisine style: Experience in European or Arabic cuisine style. Education: Culinary qualification / diploma (or equivalent professional experience). Language: Good command of English. Hygiene: Strong understanding of food safety and HACCP standards. Experience with large-volume production for multiple outlets or events.<br>Knowledge of modern plating, trends, and international pastry styles. Previous experience in the UAE or GCC market.
