Responsible for the efficient management of the Cold Kitchen, including salads, appetizers, cold buffets, canapés, charcuterie, sandwiches, dressings, and plated cold dishes. <li><span>Supervise, train, mentor, and motivate Cold Kitchen chefs and commis to improve performance and technical skills.</span></li>
